Jurutungo

Jurutungo is a highland area in Renacimiento, Chiriquí, Panama, between La Amistad International Park and the Costa Rican border. Cold, humid Atlantic air spills through gaps in the mountains; annual rainfall is around 3,000mm and the soil is volcanic. Strong winds and frequent fog make the cherries ripen slowly.

This coffee comes from the Gallardo family (Café Gallardo), who have grown coffee in the area since 1960. On the same mountain is the family's Finca Nuguo, known for its cold-room drying. The Gallardos ferment the cherries for several days in sealed tanks or bags, then dry them slowly on raised beds and in temperature- and humidity-controlled drying rooms. The farm sits at about 1,600m.

This lot

989 Honey Fermentation goes through sealed fermentation, then the cherries are pulped and dried with the mucilage left on, a honey-type process. The J in the lot code (989-J-HF) stands for the family's Finca Jurutungo.
